Most figures on this site are read straight from a government table. These are the exceptions: numbers Britain Measured works out by dividing one official figure by another. Each is labelled as our calculation wherever it appears, and each has a page showing exactly what was divided by what.

Why these are separate
A rate is a judgement as much as a sum: it depends on which population you divide by, which categories you treat as equivalent and which records you leave out. Keeping the recipes on their own pages means those choices can be argued with, rather than buried inside a number.
